TRUFFLE SHUFFLE Vol 3


The TRUFFLE SHUFFLE is a series of guest chefs who will each take over OUT for one night only and prepare a truffle omakase course.

Volume 3 of the TRUFFLE SHUFFLE will star Chef Ross Magnaye from Australia. Growing up in the Philippines, Ross Magnaye’s formative years were a constant feast of family celebrations. So when it came time to choose a career, he followed his grandmother’s footsteps, a chef and restaurateur. Melbourne became his Australian base where he apprenticed as a pastry chef then added Spanish, Italian and modern Australian restaurants to his CV. Throughout 2014, Ross worked at some of the world’s top kitchens, including a stagiaire at the Michelin-starred DOM in São Paulo, Brazil, under chef Alex Atala, and the award winning Aziamendi in Phuket, Thailand, with chef Eneko Atxa. Ross is currently the head chef of Melbourne’s popular Rice Paper Scissors group, producing simple South East Asian food that’s big on flavour, heavily influenced by his Filipino background.

Ross has headlined at pop-up events over the past year at Le Servan in Paris, TEST KITCHEN in Hong Kong, Meatsmith in Singapore, Toyo Eatery in Manila and Mejekawi in Bali, as part of his mission to share the unique flavours of Filipino food with the world. It will be his first visit to Tokyo and he is excited to create a unique truffle omakase at OUT.

OUT is excited to announce the SUNDAY BRUNCH OUT, a series of relaxed Sunday brunches to be enjoyed with family and friends. A select menu of seasonal plates will be served alongside coffee by Allpress Espresso, signature Bloody (and Virgin) Mary's and champagne - a perfect Sunday session.
